A CHAT WITH FRANCESCO, THE CHEF OF RESTARAUNT "LA TERRAZZA DEL BOFF"
A chef is always a person of great charm. With his hands, heart and head makes our experience at a restaurant special. To find out more about this creative, methodical and somewhat mysterious figure we met Francesco, the chef of "La Terrazza del Boff".
We talked a bit between recipes, gliding from one hob to another – he is always so very busy –, and here is what we discovered about him and his professional life.
What can be said? He is an expert in the kitchen. He is the capable leader of his young brigade, guiding with determination, authority and helping them learn from each other.Francesco has an enquiring mind and is also very helpful. But at the slightest hint of arrogance you end up on his black list. Therefore, avoid criticism if it is not absolutely necessary. A dominant feature of his character is stubbornness. But his brigade would tell you that it is a quality not a flaw, because Francesco is one who never gives in.
He loves the smell of the kitchen in the morning. It is the moment he starts organizing his working day in what he defines his natural environment. Many things are said about him, but he carries on regardless and worries only about what to cook for his guests. Passion, commitment and self-denial are his strong points. A part from that, he can be described as a serious person. But he also knows how to enjoy himself - on his motorbike or at Lake Garda.
If his work were a dish it would be pigeon cooked in two different ways, with its sauce and seasonal vegetables.
His passion for cooking made him give up a brilliant career in motoring to the delight of who enjoys his menus.
His only ambition is to satisfy the guests at the Terrazza del Boff.
