La Terrazza del Boff presents: an interview with Sous Chef Marco!

Imagine a panoramic terrace, surrounded by nature and overlooking Lake Garda. The sunset reflected in the water, the twelve hills in the background and the delightfully tempting smells of Mediterranean cuisine. This is not a fantasy, we are talking about “La Terrazza del Boff”, Hotel Boffenigo’s restaurant, the place where passion for beauty and passion for goodness come together. 

Where creativity and the spirit of innovation are the key elements of a culinary philosophy that reinterprets traditional Italian cuisine combining skill with harmony of flavours. As Sous Chef, research for top quality raw materials and the best local ingredients is an essential part of Marco’s work. 

We had a chat with him to find out some of the secrets of his job and his personality! 
 

Defining traits of your character
Serious, calm, I look out for others more than I do for myself. 

What you love about your job
The satisfaction of pleasing others, and cooking is my way of working off stress.

What you don’t like about your job
Nothing in particular. Maybe the long hours, but it's our job so we need to be patient!  

What you appreciate most about your collaborators
That we help each other out and get along well together. 

Other people’s flaws you can’t suffer
When they are egocentric and when they are too slow. 

Your biggest flaw
Maybe sometimes I am a bit hasty and I find it difficult to look at people in the eye when I speak. 

Your favourite hobby
Mushroom picking.

If you had a different job at these same facilities, what would it be?
I would work in maintenance, possibly with Franco! 

Your favourite area at the facilities where you work
The kitchen, no doubt about it.

The best moment in your working day
Serving time: I get a bit anxious, but it’s the best moment. 

If your job were a movie, what movie would it be?

Forrest Gump, because when everything looks quiet one still has to run.

If your job were a dish, what dish would it be?
Spaghetti alla carbonara, when prepared properly it’s amazing! 

Your secret dream
Opening my own restaurant one day... 

The first thing you notice when you walk into a hotel
The way I’m greeted, it gives the measure of the quality of the hotel.

What must a hotel offer to make you a happy customer?
Courtesy.

The country in which you would like to live
United States, Lake Michigan.

Working with you is...
Trusting and helping each other, mutual exchange. When necessary, I do whatever it takes to get the job done. 

If you had chosen a different profession, what would it have been?
I would choose this job every time!

Willingness to learn and take on new challenges, ability to listen.

What you hate most

Arrogance but also people who underestimate themselves and are scared of everything. 

What would you say to a young person wanting to pursue your career?
It’s hard work but it brings great satisfaction.

What you expect from the hotel in which you work
Professionalism, collaboration, quiet, friendly atmosphere. 

You wake up at the age of 90 and...
I live one day at the time, looking at the family I have built! 

What is your motto?
When you believe in yourself and roll up your sleeves nor bears nor wolves can stop you (granddad's saying).
