With this spirit we opened the kitchen of our restaurant, La Terrazza del Boff, to #BLocal experiences.

This is what happened during the first “Cooking with the Chef” experience. Starring Mr and Mrs Contrepois!
Cantucci cookies, tomato sauce and yoghurt mousse
The lesson started at 11.00 h at Terrazza del Boff.
Chef Francesco proposed three recipes: Cantucci cookies, tomato sauce and yoghurt mousse.
As the lesson started, Mrs Contrepois asked her husband to try and prepare the cookies (because he is not the world's best cook), so Mr Contrepois mixed the ingredients and shaped the dough into a log. He baked it for the first time, cut it into the typical Cantucci shape then put the cookies back in the oven for the last time, to make them nice and crunchy. After a bit of an awkward start, Mr Contrepois turned out to be a good and very precise apprentice... so much so that the Chef asked him to join him for the season, in exchange for a two-week stay at the hotel!
Husband and wife then started preparing the tomato sauce. They chopped the onions, stir fried them in a pan and added the blended peeled tomatoes. As the sauce needed to cook slowly for four hours, to taste the final result the Chef made them try the sauce he had already prepared!
After a short break, sipping a glass of wine and taking a few pictures, the lesson continued with the yoghurt mousse. Mr and Mrs Contrepois first tasted the mousse, then prepared it themselves. They were really surprised to find out that it was ready in just 10 minutes! To make the sauce, the mixed yoghurt, sugar and isinglass sheets and, after warming up the ingredients, they added freshly whipped cream. Finally, Mr Contrepois expertly used the piping bag to fill the little glasses, ready for the mousse portions to cool off and be served as dessert.
